Giving the Gift of Clean Eating (and fun kitchen gadgets I love or covet....)


My Christmas wish list this year looks a lot different than it has in years past. In the past I asked for books, cute clothes, sassy boots, books and lots of sparkly makeup. Since I have embraced clean eating and learning to make things for myself, I have found what kitchen gadgets are essential, what I need to get and what I really really want. I thought I would share what I have found to be some of the best purchases I have made since starting this lifestyle. (And some things I really really want.) So if there is someone in your life that is starting to clean up what they eat and avoid processed foods, think about a basket with some of these gadgets to help make being healthier everyday a little bit easier.



Olive oil sprayer --

I can not live without this. I use it almost every day and can fill it with the good stuff. I use it to spray oil on popcorn, in skillets, on salads and basically everywhere spraying oil is a good idea. And you use a lot less oil than when you just pour which can save a ton of calories. Win, win.

I have two different brands of these, a Misto and a Prepara . I like the Prepara. It costs a little more but it clogs less and it gives you the option of adding herbs and things to create infused oil. (And I like options.)


Electric Chopper

Sure you can cut up your own half an onion for that recipe but I like to avoid the whole crying into my dinner thing. I just cut it up in big chunks, throw it into this little baby and hit the button a few times (holding it down will turn it to mush) and boom! I have diced onions. No tears necessary. Plus it doubles to make mini goes of hummus or other dips. And it is small enough I can throw it in the dishwasher without it taking up the entire rack. (Dishwasher safe is an important word in this house.)

Air Popcorn Popper

This has been my saving grace on many occasions. There are just those nights when I am super snacky and I am kind of a popcorn-o-holic. So when I realized how many chemicals are in microwave popcorn, I knew I had to kick my popcorn habit to the curb. I was desperate to replace it with something and this little baby saved me. It is quick to pop and easy to clean. Plus it is like a super fun event in this house. My toddler loves watching for the popcorn to start popping and we top it with olive oil and whatever spices we feel like....fresh rosemary and sea salt popcorn anyone?

Immersion Blender

This thing may be my favorite kitchen tool of all time. I use it everyday to mix my Shakeology with frozen fruit and multiple times a week for things like pureed soups, salad dressings, hummus, pesto etc. It is so much easier to puree a soup in the pot than transfer hot liquid to a food processor. And it travels well so when I am taking my shakes on the road I pack this baby too.

Freezer Safe Jars


These are a must have for me. Freezer safe glass jars are designated by not having a curve under the neck of the jar. They are straight up and down. And are fantastic for freezing all the big batches of pureed soups I like to make.

Blender Bottles

Although I am trying to limit my use of plastics, I am finding it so hard to break up with these. I find them useful for so many things. I love keeping salad dressing in them.




Tortilla Press


Every since I visited my aunt in Texas and found them making fresh tortillas in the grocery store I was hooked. And they are almost impossible to make without a press. (Although if I do get one of these someone may want to come over and pry the fresh tortillas from my hand as I will certainly go to town for a while.)

Griddle Pan

For eggs, pancakes and all the tortillas I plan to make....all at once instead of cramming them into a tiny skillet.

Vegetable Spiralizer or as I like to call it a zucchini noodle maker

I have wanted one of these for a while now. I have visions of whole wheat pasta mixed with zucchini noodles dancing in my head. (And it will fit in my stocking *hint hint*)

Pineapple Corer

I saw one of these used at a mixology class and was amazed at how easy it was to core and slice a pineapple. (They intimidate me quite a bit.) And the leftover shell was used as a glass as a cocktail. Of course I want it.

Waffle Maker

My two year old is obsessed with waffles and it is really hard to find a decent brand of freezer waffles that meet my standard to toss into the toaster oven. I have dreams of making batches of these ahead of time and sticking them in the freezer for super busy mornings.

Food Dehydrator

I have a dried food addiction. It makes up for the fact that I love(d) all things gummy-- fruit snacks, candy, you name it. Dried apple rings are one of my favorite I feel like I am cheating snacks. And my aunt used to make homemade strawberry fruit roll ups that I loved. I have hopes and dreams of being able to make fruit roll ups (and eat them too!)

'Tis the Season (for me to miss working retail, shop like crazy and score some deals)


Not only is Thanksgiving completely overlooked in leu of Christmas by most places, yes Christmas
decor in the mall prior to Halloween, I am looking at you. But now Black Friday sales seem to extend the entire week of Thanksgiving. And while I am appalled at the amount of places open on Thanksgiving and as a former 8 year resident of the retail world, refuse to set foot in any of those places on said holiday (including the midnight sales--technically it isn't Thanksgiving anymore but that means employees need to be there by at least 10 to be ready to open at midnight!) I do love shopping on Black Friday.

I love waking up early and heading out. Scoping out places that don't have lines (because I never want a big tv, I wouldn't wait out in the cold for one no matter how cheap it is and those places only have like two of them. Totally not worth it.) Walking through the mall when it is still dark out, a big cup of coffee in hand. It is nostalgia for the days when I was there early to work. I loved working on Black Friday. I loved the crazy. I loved how fast the day went, how many of my employees I got to work with at once, the race of who could ring customers the fastest or who could keep sweaters in stock on the tables. It was such an awesome rush and one of the few days I really really miss my former job. So shopping that day allows me back a little piece of that. It isn't about the deals (although I do love getting some new jeans and workout pants when entire stores are 50% off for the day, I'm not gonna lie.) but it is really about that feeling, seeing some of my people, getting that feeling back for just a minute in the pit of my stomach -- the excitement is contagious.

A Bowl Full of Green (And this green bowl of pasta and veggies was awesome!)

If I told you I found a recipe that was super easy, yummy and healthy (also vegan and with the potential to be even gluten free -- if that's your jam--) who would call this girl a liar? Yeah, I would too. So I was super psyched when I tried a recipe buried in Chloe Coscarelli's cookbook. She is pretty much a kick a$$ vegan chef whose food is always amazing but not always clean.

easy vegan recipes, clean eating, quick and easy dinners, Chloe CoscarelliI found this recipe and was shocked I never paid it much attention -- probably because it didn't have a picture, let's be honest here. I tend to cook things that have nice pictures. It's what I do (don't judge me.) Recipes sans picture tend to get overlooked and never cooked. But as I was flipping through Chloe's Kitchen looking something easy I could have prepped and ready to go for my dear friend who offered to stay at my house and watch my child and my dogs for a weekend, I stumbled upon this recipe.

So I bought a giant tub of baby spinach, busted out my food processor and made three goes of the sauce (and froze two of them for later.) All she had to do was boil noodles and add some veggies to the same pot for the last few minutes of cooking and add the pre-made spinach pesto. I also just had her use a whole bag of frozen green beans that were already cut into small pieces and the entire bag of frozen lima beans. I figured the more veggies the better. Bulking up a pasta dish with veggies is a super easy calorie saver.

And the entire thing takes maybe 20 minutes. Quicker if your pesto is pre-made. Easy-peasy.

So here is the actual recipe:

1 lb of whole wheat pasta*
4 oz frozen green beans, cut into bite size pieces (about 1 inch)
10 oz frozen lima beans

5 oz fresh baby spinach
3 cloves of garlic
1/4 cup olive oil
1 tablespoon fresh lemon juice
1 teaspoon sea salt
1/2 teaspoon black pepper

Cook pasta according to package directions but with 5-3 minutes left on cook time add green beans and lima beans to the water. (Vary based on how crunch you like your veggies. I lean toward less time in the water and crunch veggies.) Let cook until veggies are tender and pasta is ready. Drain.

For the sauce, combine spinach, garlic, olive oil, water, lemon juice, salt and pepper. (I skipped the salt and pepper in the sauce just because I tend to like to add it to taste. After having it once I would go ahead and add both right into the sauce.) Pulse until combined.

Put the cooked pasta and veggies into a bowl and toss with the sauce.

And you have your bowl of amazing green goodness.


*the original recipe called for oreccheitte pasta -- I used spirals because I like how they grip the pesto.

**If you aren't looking to make this vegan, a little bit of fresh grated parmesan on top is yummy! I have to watch my dairy intake so depending on how my week has been, I skip this or add it.

Making the most of the days between Thanksgiving and Christmas (at least 21 of them)

This year there are 26 days in between Thanksgiving and New Years.

and make the best choices. There is something about wine, gravy and sprinkle cookies that make me want to just throw it all out the window.

And that doesn't even take into account all the celebrations in between. Work parties, extended family parties that are scheduled early so the maximum amount of people can be there, parties with friends....it is so easy to have every weekend fully booked in between Thanksgiving and Christmas. Or even between Thanksgiving and New Years.

Dear Santa, what I would like for Christmas this year is not to gain weight.

So this is how I am going to arm myself to have a totally healthy holiday season (and still enjoy all the family, friends, and fun Christmas themed cocktails that are available) and rock the little black dress I haven't worn in 4 years for New Year's Eve.

I am going to do a 21 day Holiday Shred.

Here is how it would work:

For 21 days I would put you in a closed Facebook group with others trying to achieve the same goal (including me! yay!) We will talk about clean eating, meal preparation, meal planning and everything you need to get set up for success. We will measure progress by not just using the scale but by measurements and photos (I know. Super scary but when you think you aren't making any progress it is amazing to see what you actually done in the photos. Believe me. I've been there!) Because this challenge is so short we will do this at the start of the challenge and again on day 21.

We will post daily in the group and rate our day on a scale of 1-5, 5 being the best and 1 being the worst. We will rate our diet and our exercise (basically how hard you brought it!) and whether or not we had our Shakeology.

We will commit to trying out Shakeology for the duration of the challenge. I know once I did it, I fell in love with the energy I had and how great I felt.  (*Side note* my nails look awesome. Better than when I was on prenatal vitamins. It is my current obsession since I have struggled with weak and peeling nails forever! One of the perks I didn't know I was going to get.) We will also commit to working out 5-6 days a week. I don't care if you run, walk or lift. Just get that body moving! If you already workout regularly think about stepping up your game. Adding some weight training to your cardio. If you don't have an exercise regimen we can talk about options. If you are interested in trying a Beachbody program, we can talk about that too and get you set up with something that totally works for you. There are so many options outside of P90x and Insanity (which I feel gets all the love) so if hard core intensity isn't for you, we can totally find something that is. I am currently doing a combination of Chalene Extreme and TurboFire and am in LOVE with with both. TurboFire really gives my inner cheerleader some much needed attention. And Chalene Extreme makes me feel super strong and like a total bad a$$ -- because that is what lifting weights does to me. I have found success with the at home programs from BeachBody because they are a killer workout and they all come with a schedule. So I can wake up, get my toddler some breakfast and toss in a movie, look at the schedule, pop in a DVD and press play. I don't have to worry about getting her ready to go to the gym with me or what series of exercises I am going to do that day. I know me and I need that schedule. I get really freaked out if I am going to miss a day and "mess up" the schedule or the order. But whatever works for you, we will make it happen.

Plus I will give you daily motivation, tips and tricks and share all the research I have accrued over the last few months.

But there are so many parties and it will be so hard....

Yes. Parties are hard to navigate. I have always had the fear of missing out on food and wanting to make sure I get to taste everything. I mean what if I miss the very best thing at this party? What if I never get to have it ever again? 

The goal of doing this is not avoiding temptation and saying no to every party invitation that comes in the mail this year. It is about learning how to navigate those situations so you still get to enjoy everything about the holidays. (Because isn't the point really about seeing friends and family and not so much about eating so many cookies it would put Santa to shame?) We will talk about dealing with the hustle and bustle -- some of the best ways to deal with having so much to do and so many places to go that it makes the entire holiday season just seem like a whirlwind (and makes me just want to lay on the couch to take a nap!) 

But there is something so nice about having a group of people with a common goal to help get you though it. There will be bad days and bad choices but you always have somewhere to come back to that gets you right back on the wagon. 

Taking it up a notch....

I am also going to kick it up a notch by starting my 21 day shred with a Shakeology cleanse. This is not required for the group but it is something I have found to really start things off strong. Giving back in November - What I plan to do about it

Oh November. The month that the sales world thinks is December. The month that only gets a week where we acknowledge it with a big old turkey and a pumpkin pie and some fake leaves scattered across the table for decoration. It holds the holiday that we only decorate for if we are hosting it, otherwise we get a jump on the decorating for Christmas.

I always loved Thanksgiving. I loved going out on Turkey Eve and waking up slightly hung over to an awesome dinner -- that I could continue to eat all day long. I loved watching the parade in my jammies while the house filled with the smell of that dinner. I loved waiting for the rest of my family to get there only to spend the day laying around, playing cards or hanging out with my relatives.

Things have changed a lot. Now I have to cook. Turkey Eve takes on a whole new meaning (going to bed at the same time as my toddler so I can wake up to get food in the oven.) Working out a tight oven schedule so that everything gets cooked and served warm. It is all exhausting. And as I sit here worried about the stress of it all, there are families all over who are stressing for a completely different reason. They are stressing about being able to feed their families. And it breaks my heart.

We are plagued, like many others in my generation, by the onslaught of student loan payments and other things. But I am blessed in that I have never had to worry about putting food on the table for my child. There was a time that I had to make tough choices. I was going to school full time, working retail (as many hours as they could give me) and had weeks that I spent every last penny I had. I remember having to search the back of the cupboard to eat what I could find until pay day. And I was fortunate I had those old cans of soup or whatnot to find (and my roommates snacks to steal) until payday.

Maybe it was because I remember that feeling that this article touched my heart so much. I never had to Scary Mommy Thanksgiving Challenge and I am eager to be a part of it.

Possibly The Easiest Broccoli Soup Ever (or pureed soup heaven)

no diet just eat healthyI used to think I hated soup. Not really my thing. The cooked carrots in soup made me gag and I just can't handle the texture most veggies have after swimming around in broth for such a long period of time. But now I have to renege because I have discovered that pureed soup is my jam. I am obsessed.  Give me a veggie, some stock and my immersion blender and I will make it happen.

I had some kohlrabi in my fridge. And I love kohlrabi (super weird I know) but my grandpa used to grow it. Every summer I looked forward to getting some from his garden (along with a ton of sweet corn). I would just cut and eat it raw. Yummy, awesome goodness.  

Kohlrabi is also a super nutrient dense food (meaning it has a ton of stuff that is great for you for not that many calories.) It is rich in vitamin C and some B vitamins too. According to fitday.com it contains "vitamin B6, thiamin, riboflavin, niacin, pantothenic acid and folate. B vitamins play a role in increasing metabolic rates and maintaining healthy skin and hair." Seriously, I didn't need an excuse to love the stuff but anything that helps my metabolism goes straight to the top of my favorite list. They are like the teachers' pets of all the veggies out there. Gold stars all the way.


health benefits of broccoliAnd, of course, broccoli is pretty awesome too. So this recipe is a win, win. Easy, fast, healthy and yummy (I may or may not start salivating when I think about it.)

Since soup has become my dumping ground for random veggies, I decided to take some inspiration from a broccoli soup recipe I found online and just modify it a little bit. It may be the best soup I’ve ever made (either that or I am just getting better with practice.)


Here is what I did –

2 boxes of veggie stock
2 heads of broccoli
2 large kohlrabi
1 sweet onion
TBS (or so) olive oil
Salt and pepper to taste


I cooked the onion and kohlrabi in the bottom of the pot with some olive oil until the onion started to become translucent. I added the stock and the chopped up broccoli and brought it to a boil. Turn down the heat and simmer for 30-45 minutes. Let it cool and blend.

So it turns out kind of like a cream of broccoli soup sans dairy. Of course it isn’t as creamy as the real thing without the help of some type of dairy. If you aren’t avoiding dairy completely (or need a little something to make you feel like you are cheating) you can grate some parmesan on top or even add a little goat cheese. 

low calorie quick and easy healthy broccoli soupOn a side note the original recipe called for just using water, boiling the broccoli in it, putting the broccoli in a blender and slowly adding the water back in until the soup was the desired constancy (You can check out the recipe I used for inspiration here.) I like stock and the flavor it gives it so I used stock. And if you don't have kohlrabi, skip it. Add a potato. Whatever. Just another reason I love making soup! It is hard to mess up. A great way to use up veggies that are (rapidly) heading toward their expiration date. And it is super easy to double or triple the batch, freeze and pull out on a freezing night -- like tonight-- or a day where getting a cooked meal on the table will just not happen. Heat and eat. Whoot!

Pumpkin Granola Bars (and why going on vacation makes me want to bake!)

Vacation is in T minus 2 days. I don't have a thing packed or ready to go except for buying snacks. Typically, when we head south, we fly. This year my sweet little pumpkin is 2 and while that means some independence, fights and the dreaded potty training, it also means we no longer have to spend our hours on a plane fighting with a wiggly, upset child on our laps. Yes, at the age of 2, the airlines make you buy your child a ticket (which is both a blessing and a curse -- I mean now I have hands to read my kindle and possibly take advantage of the airline beverage service since I can 1. put my tray down and 2. the odds of her knocking it over are lessened slightly by the distance of the next seat. So there's that.) But ticket prices to fly to Orlando have been crazy high lately and are not dropping so that means gassing up my car and taking a road trip.

And a road trip inspires me to buy and make snacks. Lots of them. Because what else is there to do in the car besides drive, listen to music and eat?

I saw a recipe on Pinterest for pumpkin granola bars. I have made road trip granola bars before (Tosca Reno's sweet potato bars) and they didn't make it to this blog. They were mushy and wet and soggy. Good flavor but the texture made me gag. (My poor husband had to eat a gallon size bag of them by himself. My toddler and I both voted no.) So I was hesitant to try these. Pumpkin and sweet potato (and butternut squash!) are kind of similar and interchangeable in a lot of stuff. But I gave it a shot. Because it's fall and even the air should be pumpkin flavored. (Side note - I do not drink pumpkin spice latte's they gross me out. To compensate, I attempt to eat my way through the fall by way of the pumpkin and other various squash cousins - namely of the acorn and butternut squash variety. But to each their own.)

This recipe was amazing -- not only because it contains pumpkin and chocolate but a bunch of other awesome things as well. Flaxseed for omega-3's, ginger for some anti-inflammatory action, cinnamon for all sorts of reasons (read more about that here) and even honey which (raw honey) has been touted as anti-bacterial, anti-fungal and an anti-viral substance (check out more on honey here.)

They baked up not sticky and messy but kind of cakey, not what I expect in a granola bar. I think they would make awesome cookies. They are really good. Not very sweet (I cut the original amount of honey in half) but I wasn't going for sweet. I have really cut back on sugar in general (even natural sugar) so I have become more sensitive to sweet (which for me is a mini-miracle. I used to eat frosting, out of a can.) I also think maple syrup in this recipe may be amazing.

The original recipe for the pumpkin granola bars is here. I (of course!) had to do a few things differently.

First - I doubled the recipe. An 8x8 pan was not going to cut it. (I have 16+ hours in a car with a toddler. Plus a week's worth of snacks I need to pack since she refuses to eat real meals and only snacks -- we call lunch and dinner "big" snacks and sometimes it works *wink wink*)

Second -- I added raisins because I love them and cut back on the chocolate.

Third -- I searched high and low and everywhere to find chocolate without soy lecithin. (Yes! it does exist.) I prefer my chocolate without a side of GMO soy. (I used Enjoy Life brand.)


Ingredients:

5 cups of old fashioned oats
1 cup flaxseed meal
2 teaspoons of cinnamon
1 1/2 teaspoons of salt
1 teaspoon ground ginger
1/2 teaspoon of ground cloves
1 cup of pureed pumpkin
1 cup of unsweetened applesauce
1/2 cup raw honey (or more to taste)
2 teaspoons of vanilla
1/2 cup chocolate chips (I used Enjoy Life brand)
1/2 cup raisins

Directions:

Preheat the oven to 350 degrees

Grease a 9 x 13 pan (I used coconut oil to grease mine and it worked awesome!)

In a large bowl, mix all the dry ingredients (oats through cloves)

In another bowl, mix all the wet ingredients (save the chocolate chips and raisins)

Add the wet ingredients to the dry ingredients and mix well (it was gross but I mixed it with my hands to make sure it was all mushed together -- in a good way)

Fold in the chocolate and the raisins (again I used my hands)

Press into the pan and bake for 25-30 minutes or until the top browns slightly. 

Let cool completely and cut. 

Amazing.
